Rocket-Mushroom salad

Ingredients:
Mushrooms: 2cups
Arugula : A good handful
Garlic(Minced) : 2t
Lemon Juice: 2t
Parsley(Minced): 2t
Kidney Beans (Boiled): 1/2 cup
Cracked Black Pepper: To taste
Salt: To taste
Olive oil: 2t

Method:

1.Heat oil in a skillet and roast garlic until fragrant.
2. Add Mushrooms and cook till fragrant.
3. Add salt and pepper.
4. Toss the boiled kidney beans to it.
This recipe is a make ahead till this step.
 5. Add arugula leaves, parsley and lemon juice, just before serving.

PS:: It was yum! Even a fussy eater like me
couldn't resist a second helping :)
