Hot Coconut pudding over pineapple rings

This happens with me sometimes that I pick up few ingredients while my grocery shopping, not knowing what am I going to make of them :D
This pretty was invented, when I had a connoisseur over dinner with absolutely no notice!
The dessert was a an absolute show winner.
This is so simple yet so comforting with creamy notes of coconut mingling with fresh tangy notes of pineapple.
Here's how.


Ingredients:
1. Coconut Milk : 2 tetrapacks ( I used Dabur)
2. Full cream milk : 200ml
3. Rice: 1/4 cup
4. Pineapple slices 
5. Sugar: To taste

Method:

1 In a heavy bottom pan bring together to boil milk and coconut milk.
2 Add rice and cook on medium fire until rice is cooked and the liquid evaporates leaving behind thick  
   sticky mass.
3 Add sugar to taste.
4. Place a pineapple ring on the platter and spoon out hot pudding over it.
